Chicken and Peanut Lettuce Wraps

Sorry I've been neglecting the blog! I've just been really tired lately and haven't had the energy to write up new recipes.. But here is a new one! I'm hoping to get back on track with this.. Please enjoy!

You will need:

Sauce:
2 TBS of splenda
2 TBS lime juice
1 1/2 TBS of light soy sauce
1/8 tsp of red pepper flakes

Filling:
3 C of cole slaw mix
1/2 C of chopped green onions
1/2 C of chopped fresh cilantro
1 C of chopped cooked chicken breast
1/4 C of toasted unsalted peanuts

You will also need :
12 romaine lettuce leaves

Combine sauce ingredients into a small bowl and set aside.
Combing filling ingredients in a medium size bown and set aside.

Take one lettuce leaf, 1/3 C of filling and 1 tsp of sauce and roll up!

Serves 4, 3 wraps each.

Dinner - Feb 9 2011

Spicy Grilled Tilapia

You will need:

4- 6oz tilapia filets
Cooking spray

You will need these for the marinade :

1/4 C of Lemon Juice
1 1/2 tsp of Chili Powder
1/4 tsp of Ground Cumin
1/4 tsp of Paprika
Dash of Ground Pepper



In a shallow baking dish drizzle enough marinade to cover the bottom.
Layer filets on the marinade.
Pour remaining marinade on filets.
Cover and refridgerate for 30 mins.

Heat grill and spray with cooking spray.
Place filets on grill.
Reserve marinade.
Grill filets for 4 minutes on each side, in the meantime heat reserved marinade in a small sauce pan.

SERVES 4.

Mashed Potatoes

You will need:

2 lbs of idaho potatoes, peeled and cut into chunks.
1/3 C of fat free milk
1 1/2 TBS of margarine
1/2 tsp of salt
1/4 tsp of ground pepper

Place potatoes in pot.
Add cold water to cover.
Bring to a boil and cook until fork tender.
Drain potatoes and return to pot.
Mash and add remaining ingredients.


SERVES 8 (1/2 C servings).

Per request of many I figured this would be an easy way of sharing my recipes and pictures. Really they aren't my recipes, well atleast not all of them..most come from books, but I would still love to share them with you and hope that you can turn around and re-create the meal.. maybe make it better then mine by tweeaking some parts of the recipe (now if you choose to re-create please do share your changes with me and send me feedback about the recipes you have tried).

Well this is just an introduction, I will try and post up about 3-4 recipes a week.

And please feel free to keep me accountable for this if you'd like. :)
